Welcome to the JustForMom newsletter!

Announcements: JustForMom.com has now become a part of the Just For Mom Foundation. In an effort to provide quality support and information that inspires, educates and encourages moms, we have decided to utilize the web site as a communication's tool for ALL moms.

New features will include:

  • An updated and redesigned recipe section complete with pictures
  • A brand new book review section for both children's books (which will be found in the Children's Corner section under the Book Nook) and adult books (which will be found in the Recommended Reading section)
  • Expanded sections with more content and tips
  • And much more....

    These new changes will not only provide much more valuable information and product reviews, but combining our efforts will mean increased exposure and visibility. It also means that all ad space and book reviews are tax deductible and going to support a great cause- MOMS!

    Update: A Quick update about the Mom's Choice Awards™. The contest officially ended on April 30th with great success. We received some amazing books that will be featured on the Mom's Choice Award'ssite next month. Among our esteemed panel of judges are Dr. Twila Liggett of the Reading Rainbow and our most recent addition Julie Aigner- Clark, the creator of Baby Einstein. Julie has been working on an incredible project with John Walsh called- Safe Side which is a safety video for children due to be released later this month. A review of the video will be in next month's newsletter and also on our web sites.

    We are honored and excited to have Julie on board!

    "Mom Time" in the Garden

    Spring is one of the most beautiful times of year and a great time to get out and connect with nature. A wonderful way to unwind is in the garden. Try planting flowers or vegetables and feel the stress slowly fade away. Whether your planting daisies or coneflowers, Hydrangeas or lilacs, the patient attention we plant a flower with is a good lesson in life. Nurture yourself the way you nurture your garden.

    Pick your favorite flowers. Decide whether you want to plant using pots for your deck or plants for the flower bed in your backyard. Give the flowers in your life a special place to be planted. Feed them with good food, water them and watch them grow by the light of the sun. With constant care and attention, flowers grow year after year and the more fertile the ground the healthier the plant.

    Gardening is a metaphor for life. We as moms often times forget to take time for ourselves and we also forget that sometimes we need to treat ourselves as a flower that needs love and nurturing to grow healthy and strong. Be aware of negative advice from a well meaning friend or relative, as a weed that wants to over power that flower. Plant seeds of good thought and the mind will grow. A fertile mind will grow strong and healthy. If we start with ourselves, we can teach our children to do the same.

    How often do you make your Self smaller, close down, or don't show your full, brilliant Self so that others will feel better or not be triggered? I have a hunch, that it happens more times than you like.

    In the last couple of weeks, I've become particularly aware of this 'problem' happening in my own life. In my previous 'life', I worked for corporate Amercia for over 17 years and have been working for my Self since 2000. Recently, a fantastic opportunity fell into my lap that involved working for a non-profit company.

    While things have been going well, including interviews and interactions, and I'm excited about the opportunity; I have also been left with this nagging feeling of dissatisfaction. Something has been bugging me. Between meditation and some discussions with friends, I've been able to put my finger on it - I've been playing small.

    This Week's Recipe

    YUMMYBasil and Five-Spice Infused Chicken Legs with Cantaloupe Salad

    Take advantage of the fruits and herbs of summer with this recipe in which chicken leg quarters are stuffed with fresh basil leaves and marinated in favorite Asian ingredients: lemon grass, soy sauce and five-spice powder. The chicken legs are grilled or broiled, served with cantaloupe slices and drizzled with a rice vinegar, brown sugar and five-spice powder dressing. Serve this low calorie dish with sticky rice, snap peas and sorbet for dessert. 14 chicken leg quarters
    16 basil leaves

    For Marinade:
    1 tablespoon five-spice powder
    1 stalk lemon grass, coarsely chopped
    1/4 cup soy sauce
    2 tablespoons vegetable oil
    3 tablespoons water

    For Cantaloupe Salad:
    1/2 cantaloupe, thinly sliced
    1/2 teaspoon five-spice powder
    2 tablespoons rice vinegar
    1 1/2 tablespoons vegetable oil
    2 teaspoons brown sugar
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    12 basil leaves, slivered



    1. Lift the skin on leg quarters and press 4 basil leaves under each. Place chicken in plastic bag that seals.
    2. In blender, mix 1 tablespoon five-spice powder, lemon grass, soy sauce, vegetable oil and water. Puree until smooth. Pour mixture into plastic bag with chicken; seal and shake until chicken is coated. Refrigerate at least 1 hour, or up to 24 hours.
    3. When ready to cook, prepare coals for grill, or preheat gas grill. Place chicken on grill over medium heat and cook, turning, until firm and cooked thoroughly, about 10 - 15 minutes per side.
    4. While chicken is cooking, prepare salad by whisking together in medium bowl 1/2 teaspoon five-spice powder, rice vinegar, 1 1/2 tablespoons vegetable oil, brown sugar, salt and pepper. Set aside. Arrange cantaloupe slices on serving plates or platter. Drizzle salad dressing over cantaloupe; sprinkle with slivered basil leaves. Place chicken legs next to salad to serve.

    Makes 6 servings.

    Cooking Tip:

    Five-spice powder, a spice used extensively in Southern Chinese and Vietnamese cooking, is a rich blend of five single spices, mixed together to stimulate simultaneously all taste sensations: sweet, sour, bitter, pungent and salty. Now sold pre-packaged and pre-blended at most grocery stores, five-spice powder is becoming more familiar to American home cooks who want to add a strong flavor to meats like chicken.

    Nutritional Information, Per Serving: 370 calories; 10 g carbohydrate; 22 g fat; 5 g saturated fat

    How’s Your Life?

    That old quote "Out of the mouths of babes oftime come gems" came to mind after I read an e-mail letter from my eight year old granddaughter. Alexis wrote to tell me about school, some new friends, and a cheerleading class she "loved." She chattered about each one and then made this statement: "I’m doing just great in my life. How about yours?"

    Her words brought a smile to my face. Alexis will do all right in this world if she already recognizes that her life is a good one. Most eight year olds consider the positive things in life as something to be expected. I suspect she will grow up to look at a glass as half full rather than half empty.
