Holiday Edition
Welcometo the final JustForMom newsletter for the Year 2004. This is our Holiday edition- chock full of Holiday joy- and the beginning of a well deserved break before we enter into the excitement upon us, in 2005!
So many things have happened this year, some tremendous, others disappointing, but in the end all things happen as they must.
Here's a preview of what's to come-
- March 24, 2005- the Just For Mom Foundation will support our first fundraiser at Dylan's Candy Bar in NYC, to raise money for a little girl with leukemia.
- Mother's Day- Moms In Print will release its second book- A Brilliant Performance, a story of a young mother's battle with breast cancer only to find out the next day she was pregnant. This book will not only pull at your heartstrings, but will inspire you to see the beauty in all things in life.
- Mid year, we will begin accepting applications for grants to be awarded through the foundation. I will continue to update you on the progress through the newsletter.
- Yes we will be launching the magazine. Unfortunately, this was one of those things that had to be put on hold. For all of the women who sent me your address for your free copy, you will still receive an issue when we are finished.
- Lastly, many more changes to come to the site!

It's Enough

I was listening to Christmas music while fixing Sunday breakfast and the song- "Feed the World" came on the radio. I listened intently as I thought about the horrible atrocities in Africa and how it's true that most of the children in that country probably don't know its Christmas time around the world.
Information about the conditions in Africa has appeared on the news a lot lately and it certainly warrants a new perspective on the things we are blessed with on a daily basis- a warm house, food, TV, the internet so we can exchange information with each other and many more things we take for granted.
There's no easy fix for the world's problems- we witness the difficulty on a daily basis- but if we take a few extra moments to feel blessed for our lives and the blessings we receive in them each day, we will begin to send out positive thoughts that will resonate in the hearts of children around the world. Accepting what we have as enough is a good place to start. I am guilty of going over in my head how many presents I bought for the boys and whether I need to go out and buy one more thing…it gets to be a little much- "To be upset over what you don't have is to waste what you do have."-Ken Keyes, Jr.
Make a commitment this year to be happy and content with what you have and what you are given and remember that love, health and happiness are great gifts for Christmas too!

Holiday Release

Holidays are inevitably the most stressful time of year. Pressures are put upon us that even Superman couldn't handle and we accomplish all of these things looking as if we never missed a beat or do we?
This is when it is the most crucial to take time to tend to your own needs. Just because your in-laws have super human expectations of you, doesn't mean you have to cater to their desires. Take a break this Holiday season and do something nice for yourself.
If your perfectly planned meal doesn't arrive at the table on time, don't sweat it! If you haven't fought the mall crowds before December 24th, don't let it ruffle your feathers. And if your family puts a lot of pressure on you to perform to their drum, skip the beat!
We allow the expectations of others to become a part of our own belief system. Make a decision that you are going to stay home this year and have a quiet evening with your husband and children. It's really okay to put the needs of yourself and your family ahead of what other people want from you.
Create for yourself an image of the perfect, stress free Holiday season and take a step towards turning that image into a reality. I believe that once you take the first step, the rest is a piece of cake!

Holiday Recipes
Garlic Prime Rib
Garlic studded prime rib is made festive when served with individual Yorkshire Puddings.
1 (4 to 5-pound) rolled beef prime rib roast
6 cloves garlic, each cut lengthwise into thirds
4 medium carrots, cut into 1-inch pieces
2 medium onions, each cut into 8 wedges
1/2 cup chopped fresh parsley
2 bay leaves
1 cup water
2 teaspoons chopped fresh thyme leaves*
1 teaspoon coarsely ground pepper
1/2 teaspoon salt
- Heat oven to 450°. Place roast in 13x9-inch baking pan. Cut 18 slits with tip of sharp knife through fat and into
meat just large enough for garlic. Insert garlic piece into each slit.
- Place carrots, onions, parsley and bay leaves around roast; pour water over vegetables.
- Stir together thyme, pepper and salt in small bowl; sprinkle mixture over roast. Bake 30 minutes to brown outside
of roast.
- Reduce oven temperature to 325°. Bake for 1 hour to 1 hour 15 minutes or until meat thermometer reaches 130°F.
Let stand 10 minutes or until meat thermometer reaches 140°F.
Makes 10 servings.
*Substitute 1 teaspoon dried thyme leaves.

Warm Winter White Wassail
Here we go a wassailing, a wassailing!
1 (64-ounce) bottle Ocean Spray® White Cranberry Juice Drink
4 (3-inch) cinnamon sticks
1/4 teaspoon ground ginger
6 teaspoons butter, softened
6 teaspoons brown sugar
3 ounces almond liqueur, optional
6 (3-inch) cinnamon sticks, garnish
- Combine juice, cinnamon sticks and ginger in a large saucepan. Heat to boiling, reduce heat and simmer 10
minutes.
- Put 1 teaspoon each of butter and brown sugar in 6 large mugs. Pour hot juice drink into each mug. Stir gently.
Add 1/2 ounce almond liqueur to each mug if desired. Garnish with a cinnamon stick.
Makes 6 servings.

Eggnog Snowman Cookies
Snuggle in front of the fire, with a cup of cocoa and one of these soft, old-fashioned, eggnog-flavored cookies.
Cookie Ingredients:
3/4 cup granulated sugar
3/4 cup LAND O LAKES® Butter, softened
1/3 cup prepared eggnog
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Frosting Ingredients:
3 cups powdered sugar
1/4 cup prepared eggnog
1 to 2 food colors
Miniature semi-sweet real chocolate chips
- Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2
minutes). Add 1/3 cup eggnog, egg and vanilla; continue beating until well mixed (1 to 2 minutes). Reduce speed
to low; add flour, baking powder, nutmeg and salt. Beat until well mixed (1 to 2 minutes).
- Divide dough in half; wrap each half in plastic food wrap. Refrigerate until firm (at least 1 hour).
- Heat oven to 375°F. Roll out dough on lightly floured surface, one-half at a time (keeping remaining dough
refrigerated), to 1/4-inch thickness. Cut with 3 to 4-inch snowman cookie cutter. Place 2 inches apart on
ungreased cookie sheets. Bake for 8 to 10 minutes or until edges are lightly browned. Cool completely.
- Combine powdered sugar and 1/4 cup eggnog in small bowl; mix well. Remove one-third of frosting; place in two
small bowls. Tint frosting with food color as desired.
- Frost snowmen with white frosting. Use tinted frosting to decorate cookies, as desired. Add miniature chocolate
chips for eyes and buttons.
Makes 14 cookies.
TIP: For wavy effect, pipe tinted frosting in parallel lines. Drag toothpick through frosting before it sets.
